Risotto with Zucchini and Turmeric


  • 1 cup of rice
  • 3 cups of water
  • 1 cup of zucchini
  • 1 carrot
  • 1 onion
  • 5 pieces of garlic
  • 1/4 cup of pine nuts
  • coconut oil
  • salt
  • thyme
  • 2 spoons of turmeric spice

First you have to bring water to boil and add rice. Cook for 15 minutes until al dente. Second fry onions for couple of minutes, add zucchini, salt, carrots, garlic, pine nuts and fry for additional 5 minutes. After the sauce is ready add previously cooked rice, thyme, tiny bit of water, and mixed it up for another minute. At the end add 2 spoons of turmeric and enjoy the meal.
