Gluten-Free Buckwheat Porridge with Mushrooms

Bring water to boil and add some salt (1:3 ratio). Cook buckwheat for 5 minutes (until al dente). After cooking it for 5 minutes run some cold water through buckwheat and drain it. On coconut oil fry garlic and onions and then add mushrooms. After frying this for couple of minutes add buckwheat and all the spices (salt, pepper, thyme, majoram). Saute for few minutes and serve warm.

Ingredients for two servings:

  • Buckwheat (1 cup)
  • Mushrooms (by your choice)
  • Young Onions
  • Garlic
  • Coconut Oil
  • Salt, Pepper, Thyme, Majoram
